Filtering

To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

To avoid severe burns when pouring hot oil into vat, wear personal protective equipment (PPE) and take care to avoid splashing.

Slipping Hazard

To avoid personal injury, do not exceed filter pan capacity (1 vat or 2 split vats).To avoid overfilling the filter pan, drain only 1 vat at a time. Make sure the floor area around equipment is completely clean and dry to avoid slip risks.

NOTICE -

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

The oil level must always be above the heating elements and at the proper oil level indicator on the rear of the vat. Failure to follow these instructions may result in fire, severe burns, and/or damage to the fryer.

To avoid personal injury and fire, ensure that oil completely covers heating elements or gas burner tubes.

Do not bypass the Melt Cycle. The type of oil being used in the fryer determines the amount of heat applied during the Melt Cycle. If the controls are set to the Solid setting, less heat is applied to the solid oil than if the controls were set to Liquid. Too much heat applied to solid oil causes much smoking, and could cause a fire. Match this setting to the type of oil being used at the time. When using new solid oil, it is recommended to melt the solid oil on an outside source before placing oil in the vat.

NOTICE!: Solid oil is not recommended as it can cause clogging and pump failure.

Use high quality liquid frying oil in the open fryer. Some low grade oils have a high moisture content which causes foaming and boiling over.

To avoid serious personal injury or property damage, do not exceed maximum product capacity and filter as recommended by manufacturer.

Do not overload, or place product with extreme moisture content onto racks or in baskets.

  • 10 lbs (4.5 kg) is the maximum amount of product per full vat

Oil Care

  • To protect the oil when the fryer is not in immediate use, the fryer should be put into the Idle Mode.
  • Frying breaded products requires filtering to keep the oil clean. Skim frequently throughout the day and filter thoroughly once a day.

  • Discard oil if CHANGE OIL SOON displays or if the oil shows signs of excessive foaming or smoking.

  • Maintain the oil at the proper cooking level. Add fresh oil as needed.

Filter Menu

Press and hold the F (Filter) button. The following menu displays:

  • 1. EXPRESS FILTER
  • 2. DAILY FILTER
  • 3. DISPOSE
  • 4. DRAIN TO PAN
  • 5. FILL FROM PAN
  • 6. FILL FROM JIB (oil reservoir)
  • 7. EXIT

Express (Quick) Filter

Slipping Hazard

  1. During normal operation and after 36 cook cycles, the Filter Light illuminates on the front of the fryer, and then FILTER LOCKOUT/YOU *MUST* FILTER NOW displays. The control stops, refusing further cook cycles until the vat is filtered.
  2. Ensure the filter pipe is tightly connected, and the filter pan is as far back under fryer as it will go and the filter pan cover is in place.
  3. NOTE: CHK PAN displays if the filter pan or cover is not in place.

  4. Press the 1 button, *SKIM VAT* displays, and then CONFIRM YES NO.
  5. Skim crackling’s (breading) from the surface of the oil.
  6. Press the 1 button, OPEN DRAIN displays.
  7. Pull the drain knob out, DRAINING displays, and then oil drains from the vat into the filter pan.
  8. WARNING!: To avoid overfilling the filter pan, only drain 1 vat at a time. The filter pan holds 1 vat of oil. Overfilling the filter pan may cause personal injury.

    NOTE: Stop the filtering process by turning off the power switch, STOPPED displays followed by CONTINUE FILTER and YES NO. Press the 3 button, QUIT FILTER and YES NO displays. Press the 1 button and SmartFilter is cancelled. The blue light goes out, and the controls return to normal operation. The control will suggest filtering after several more cook cycles.

  9. If the drain is clogged, VAT EMTY displays followed by YES NO. Use the HP approved straight white brush to clear the drain, and then press the 1 button, DRAINING displays. The control proceeds with the filtering process.
  10. At the end of drain cycle, VAT EMTY displays followed by YES NO. Visually ensure the vat is empty, and then press the 1 button, WASHING displays. Once the filter process is complete, CLOSE DRAIN displays.
  11. Push the drain knob in to close the drain, FILLING displays and the vat re-fills with oil.
  12. Once the vat fills, IS POT FILLED? and YES NO displays. Ensure the vat is full and then press the 1 button and the control returns to normal operation.
  13. If the oil has not pumped back to the proper level in the vat during the Quick Filter process, press the 3 button and the pump runs for another 30 seconds. IS POT FILLED? and YES NO displays. Ensure the vat is full, and then press the 1 button, the control returns to normal operation.
  14. NOTE: You can try to fill the vat 3 times.

Filter Error

After trying to fill the vat 3 times without success, the *CHANGE* *FILTER* *PAD* CLOGGED? displays.

  1. Press the 1 button and the controls turn OFF.
  2. Change the filter envelope, using the procedures in Changing the Filter Envelope Section. If the filter envelope is not changed, the CHANGE FILTER PAD? reminder displays every 4 minutes until envelope is changed.
  3. During the next Quick Filter with a new filter envelope, if the vat is not filled after 3 tries, FILTER SERVICE REQUIRED-SEE TROUBLE-SHOOTING GUIDE displays followed by “YES”.
  4. Press the 1 button and the control turns the unit OFF.

NOTE: To ensure the vat fills completely, clean the filter pan at least once a day, change the filter envelope at least once a day, and make sure the JIB (oil reservoir) is full and that the O-rings on the filter pan are in good condition. If your store operates 24 hours a day, clean the filter pan and change the filter envelope twice a day.

Daily Filtering

This filtering procedure allows for a more thorough cleaning of the vat and should be done once a day. The vat can be filtered during any non-frying times.

NOTE:

  • Best results are obtained when oil is filtered at the normal frying temperature.
  • CHK PAN displays if the filter pan or cover is not in place.
  • A new filter envelope should be used on the first filter of each day, but the same filter envelope can be used the rest of the day.
  1. Press and hold the F (Filter) button until 1. EXPRESS FILTER? displays.
  2. Press the down-arrow button and 2. DAILY FILTER? displays.
  3. Press the 1 button and CONFIRM YES NO displays.
  4. Press the 1 button for YES, OPEN DRAIN displays.
  5. Pull-out the drain knob, DRAINING displays and the oil drains from the vat. Or press the 3 button and controls return to normal operation.
  6. Once oil has drained from vat, remove basket support from vat, SCRUB VAT COMPLETE? YES NO displays.
  7. Scrape or brush the sides and the bottom of the vat, being careful not to damage the sensing probes.
  8. Scrub the weld seam of the vat with the brush, paying special attention to remove any debris that might be present.
  9. Once the vat is clean and SCRUB VAT COMPLETE? YES NO displays, press the 1 button and WASH VAT YES NO displays.
  10. Press the check mark (√) button, WASHING displays and oil circulates through the vat for several minutes.
  11. When the wash cycle is complete, WASH AGAIN? YES NO displays.
  12. Press the 1 button if another wash is needed, otherwise press the 3 button and CLOSE DRAIN displays.
  13. Push the drain knob in to close the drain, RINSING displays, and the vat fills with oil. Once the vat is filled, OPEN DRAIN displays.
  14. Pull out the drain knob to open the drain, RINSING displays. When rinsing is complete, RINSE AGAIN? YES NO displays.
  15. Press the 1 button if another rinse is needed, otherwise press the 3 button, POLISH? YES displays.
  16. Press the 1 button for YES and oil is polished by circulating it through the filtering system, 5:00 NO=STOP displays. If desired, press the 3 button to stop the polishing, otherwise the oil is polished for 5 minutes. Once the oil is polished, FILL VAT? YES displays.
  17. Press the 1 button and CLOSE DRAIN displays.
  18. Push in drain knob to close drain, FILLING displays and the vat re-fills with oil.
  19. NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

  20. Once full, IS POT FILLED? YES NO displays.
  21. Press the 1 button and the fryer returns to normal operation.
  22. If the 3 button is pressed, FILLING displays.
  23. NOTE: After 4 tries, filling the vat, ADD QUIT displays. Press the left Timer button, and JIB pump runs 60 seconds, filling vat from oil reservoir. When the vat is full, press right Timer button and IS POT FILLED? YES NO displays.

  24. Press the 1 button and the fryer returns to normal operation.

Manually Setting New or Used Oil

  1. Turn the POWER switch to OFF.
  2. Press and hold the number 5 while turning the POWER switch to ON, until IS OIL NEW OR USED? displays.
  3. Press the 4 button for new oil, or 5 for used oil.
  4. If the 4 button was pressed, OIL IS NEW? displays.
  5. Press 1 for YES, and THANK YOU displays, and controls resume normal operation.
  6. If the 5 button was pressed, OIL IS USED? displays.
  7. Press the 1 button for YES, and HOW OLD IS OIL? displays.
  8. Press the up and down arrow to set the age of the oil.
  9. Press the Timer button, THANK YOU displays and the controls resume normal operation.
