Operating the ODS 400 with Evolution Elite Open Fryers

The ODS holds approximately half the volume of oil contained in the vat. To prevent splashing and spillage, drain no more than half of the oil in to the ODS at one time.
Burn Risk To avoid burns, use PPE when connecting to or disconnecting from oil disposal unit. |
To avoid personal injury, ensure cover is in place before moving shuttle. |

Open the door, lift-up on the filter pan stop and pull-out the filter pan assembly, using the handle on the filter pan.

Release cover latch and hinge cover back on oil disposal shuttle. Make sure crumb catcher is in place.

Roll the oil disposal shuttle under fryer until it stops. Make sure the fryer’s drain aligns with opening in shuttle.

Using the fryer controls, press and hold the Filter button (on either side) until *FILTER MENU*, along with “1.EXPRESS FILTER” displays.

Press and release the right arrow button twice until “3.DISPOSE” displays.
Press the confirm button and “DISPOSE?” along with “YES NO” displays.

With discard shuttle rolled into place, press the confirm button and “OPEN DRAIN” displays.

Pull-out on drain knob to open drain and “DRAINING” displays. Oil now drains from the vat into the shuttle.
If oil disposal shuttle is not properly in place, “IS DISPOSAL UNIT IN PLACE?” displays. Adjust the bracket on the front of the shuttle as needed by loosening the 4 nuts securing the bracket and moving the bracket up or down. Once properly adjusted, “DRAINING” displays.

“VAT EMTY”, along with “YES NO” display. Verify that vat is empty, and press the confirm button.

“CLN VAT COMPLETE”, along with “YES NO” display. Once vat is clean, press the confirm button and close drain.

“MANUAL FILL POT”, followed by “VAT FULL”, along with “YES NO” display. Fill the vat to the lower indicator line on the rear of the vat and then press the confirm button. Controls return to normal operation.
