Filtering

With prolonged use, the flashpoint of oil is reduced.

To avoid personal injury or property damage, do not use oil that is foaming or shows signs of excessive smoking.

If the oil temperature exceeds 420°F (216°C), immediately shut off the power at the main circuit breaker and have the fryer repaired. If oil temperature exceeds its flash-point, fire will occurs, resulting in severe burns and/or property damage.

Filtering prolongs the life of the oil and the equipment, as well as improves product quality. There are various ways to filter the oil. As an example, a quick filter must be performed periodically between cook cycles to clean the oil and remove debris from the vat. A daily filter is run at the end of the day to thoroughly clean the unit. A polish is a prolonged filtration cycle used to extend the useful life of the oil. This section explains how to access and navigate the filtration menus.

Filter Menus

  1. Press and hold the P button until *MAIN* displays. Refer to Main Menu.

  2. Select 1. FILTER from the menu. Numbered filtering options display.

  3. Push the P button repeatedly to access additional menus.

Quick Filtering

The 1. QUICK option allows operators to perform a quick filter of the oil on-demand.

  1. Select 1. QUICK FILTER. A confirm prompt displays.

  2. Skim the vat and press check mark button for YES.

  3. The drain valve opens and oil drains into the filter pan.

  4. After vat has drained, pump turns on with the drain valve still open and circulates oil through the filter envelope to clean the oil.

  5. When the control prompts >>CLOSE DRN (close drain), the pump keeps running.

  6. Make sure no brushes are left in the drain valve, then press CLOSE button.

  7. The drain valve closes and pumping continues. The vat begins refilling.

  8. When the vat has refilled and the pump is pumping air bubbles, press the STOP button at lower right of control.

  9. IS POT FILLED? will display. Select YES to confirm that oil has refilled the vat.

  10. The fryer pumps for an additional 20 seconds to try to get the last of the oil out of the drain pan.

  11. The pump turns off and the control resumes heating.

  12. The display flashes WAIT until the oil heats back up to the cooking temperature.

  13. When WAIT vanishes and the product names appear, the fryer is again ready for cooking.

Filter Lockout

The Filter Lockout feature will force a user to filter after 36 cook cycles. The number of cook cycles remaining is displayed at the center, bottom of the Cook Mode display. When the cook cycle counter reaches 0.0, another cook cycle cannot start until the fryer has performed a Quick Filter.

NOTE: A best practice is to perform a Quick Filter in an available vat where no cooking is taking place when the filter count is in single digits. This will reset a vat's filter count to 36 and avoid Filter Lockout for that vat during busy periods. See Quick Filtering.

On multi-vat fryers, only one vat at a time can be in Filter Lockout mode. If a vat is in Filter Lockout mode, subsequent vats that drop to 0.0 cook cycles will not begin Filter Lockout, and will be allowed to continue cooking without interruption.

Once the first vat finishes filtering, heats to set point, and is ready for cooking, the subsequent vat with 0.0 cook cycles will activate its Filter Lockout screen and prompt to filter. If the vat is cooking when the first vat returns to operation, the Filter Lockout screen will activate when the cook cycle completes.

When Filter Lockout is activated, an alert will sound and the control display will show FILTER-LOCKOUT with the message, YOU *MUST* FILTER NOW.

  • Press YES to begin filtering.

  • Press NO x to postpone filtering for a short time, such as to gather brushes or retrieve the filter pan. The control display will briefly show "Delayed," then return to the FILTER-LOCKOUT BEGIN? message.

    The filter operation can be postponed but cannot be skipped.

After 60 seconds, if the filtering has not begun, the filter alert resumes and the YOU *MUST* FILTER NOW message will display. The user cannot start another cook cycle until a filter operation is performed.

  • Press YES to start the Quick Filter operation. The drain opens and the automatic filter operation is performed.

When the Quick Filter operation completes, normal cooking mode returns and the number of cook cycles resets.

Due to oil temperature drop from filtering, the control display may start with WAIT message, as the fryer heats back to cooking temperature.

Daily Filtering

The 2. DAILY option allows operators to perform a daily filter of the oil and a wash cycle, if desired. This filter cycle drains the oil from the vat completely enabling the user to clean the crumbs out of the vat and wash them down the drain. The crumb catcher in the drain pan holds the debris and the filter cleans the oil.

  1. Select 2. DAILY. A confirm prompt displays. If the operator selects:

    • NO x, the display returns to the previous menu.

    • YES, the drain opens automatically and the oil begins draining. As the oil drains a brush symbol displays. Then three prompts display: FILL, WASH, DRAIN.

      The control attempts to detect when the pot does not empty properly. The control monitors the main temperature probe, and looks for it to begin cooling at a predetermined rate, as evidence that the oil has drained down below the probe and the probe is now air cooling. If by the end of the initial -Draining- step, the control has not detected sufficient temperature cooling on the main temperature probe, the control activates a display that graphically represents a blocked drain, and displays the messages DRAIN BLOCKED?, CLEAR THE DRAIN. The display continues until the expected cooling rate is observed on the main probe, or until the operator presses a button to acknowledge the message.

  2. Press FILL to return the filtered oil to the vat. After a few moments, the drain closes and the oil returns to the vat. When the vat is close to full, the control panel chirps and a display timer starts counting down. Press STOP at any time to discontinue fill.

  3. If the unit does not detect the oil returning to the vat or if the vat sensor detects the oil is below the full line the message IS POT FILLED? displays. Check the oil level to confirm the vat is full. If the oil is:

    • Level with the hot fill line on the back of the vat, press YES.

    • Not level with the hot fill line on the back of the vat, press NO x and the filter pump motor runs for an additional 90 seconds.

  4. Press X, and Polish, Back, Exit displays.
  5. Select POLISH to perform a polish operation, or select EXIT to finish filtering and return to normal operation. The BACK option returns to the FILL/WASH/DRAIN screen.
