Cleaning the Vat
After the initial installation of the open fryer as well as during every change of oil the vat should be thoroughly cleaned as follows:

To avoid personal injury, always wear PPE when cleaning vat and follow instructions on the cleaning solution. |
Always wear chemical splash goggles or face shield and protective rubber gloves when cleaning the vat as the cleaning solution is high in alkaline. Avoid splashing or other contact of the solution with your eyes or skin. If solution comes in contact with your eyes rinse thoroughly with cool water and see a physician immediately.

Watch the cleaning solution constantly to make sure it does not boil over causing damage to controls. If the cleaning solution in the vat starts to foam and boil over, immediately turn the POWER Switch to OFF or damage to components could result. |

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals. |

Remove the filter, filter screen, and standpipe assembly from the clean filter pan and set aside.

Place the empty filter pan with lid under the fryer. Slide back as far as possible.

Cover any adjacent vats to prevent cleaning solution from contaminating oil during procedure.

Overfill the vat 1 inch (25 mm) above the upper-level indicator with warm water, add two packets of Prime Cleaner to the water and mix thoroughly using the gong brush.

Start the Clean-Out Mode for 6 or 12 button controls and the timer starts counting down. For C1000 controls, turn the main power switch to the ON position and set temperature to 195F (90.5C).

For 6 and 12 button controls, when the timer reaches zero, turn the main power switch to the OFF position. For C1000 controls, turn the power switch to the off position when the solution reaches 195F (90.5 C) and 15 minutes elapses.

If performing a hot soak, let the cleaning solutions stand for 15 minutes with the power off before continuing with the next step. If performing a cold soak, let the water sit overnight with the power off to cool to room temperature before continuing with the next step.

Use the gong brush and black L tipped brush (never use steel wool) to scrub the vat.
NOTE: Use the black L tipped brush to scrub the bottom of the vat, between burner tubes and behind heating elements. Use the nylon scrub pad to remove stubborn carbon build up from corners of the vat.

After scrubbing, open the drain valve and drain 1/3 of the cleaning solution from the vat into the empty filter pan and discard. Repeat until all cleaning solution is discarded.

Replace the empty filter pan under the fryer.

With the vat empty, again use the gong brush, black L tipped brush and nylon scrub pads, scrub the interior of the vat.

Use a 2-quart (2-liter) pitcher to rinse the vat 3 times with clean, warm water
NOTE: Prime Cleaner does not require an additional vinegar rinse step. For cleaners requiring a vinegar rinse, follow instructions provided by cleaning agent manufacturer for additional fill, heat and rinse steps to neutralize cleaning agent.

Remove filter pan, discard water and rinse filter pan.

Close the drain valve.

Thoroughly dry the vat, filter pan and components, fry basket, etc. making sure all the parts that contact the new oil are as dry as possible.
NOTE: Oil will not pump through a wet filter.

Replace the clean filter screen assembly with a fresh filter in the filter pan, replace cover, and install under fryer.

Refill the vat with fresh oil to the lower (cold fill) fill line.
