Cleaning the Vat

After the initial installation of the fryer, as well as before every change of oil, the vat should be thoroughly cleaned as follows:

To avoid personal injury, always wear PPE when cleaning vat and follow instructions on the cleaning solution.

Always wear chemical splash goggles or face shield and protective rubber gloves when cleaning the vat as the cleaning solution is high in alkaline. Avoid splashing or other contact of the solution with your eyes or skin. If solution comes in contact with your eyes rinse thoroughly with cool water and see a physician immediately.

To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

NOTICE -

To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

NOTICE -

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

  1. Turn the COOK/PUMP switch to OFF, and unplug unit from wall receptacle.
  2. If hot oil is present in the vat, it must be drained by slowly pulling the drain handle out towards you.

  3. Close the drain valve and discard the oil.

  4. Raise lid, remove the racks and carrier from lid, and tilt lid back, so that the lid won’t interfere with cleaning.

  5. Refer to KFC's Standard's Library for cleaning instructions.

  6. Thoroughly dry the filter pan, and the vat interior.

  7. Replace the clean filter screen assembly in the filter pan and install under fryer.

  8. Refill the fryer with fresh oil.
