Fire Hazard

To avoid personal injury and fire: install appliance with minimum clearances described in manual; do not spray aerosols near appliance while in use. Install the open fryer with minimum clearance from all combustible materials.

The proper location of the appliance is very important for operation, speed, and convenience. Choose a level location for the appliance to ensure proper operation including oil coverage of product. Choose a location which provides easy loading and unloading without interfering with the final assembly of food orders. Operators find that frying from raw to finish, and holding the product in a warmer provides fast continuous service. Landing or dumping tables should be provided next to the fryer. The best efficiency is obtained by a straight line operation, i.e. raw in one side and finish out the other side. Order assembly can be moved away with only a slight loss of efficiency.
