Cleaning the Vat

After the initial installation of the fryer, as well as before every change of oil, the vat should be thoroughly cleaned as follows:

  1. Turn the main power switch to OFF.

    To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

  2. If hot oil is present in the vat, it must be drained by slowly opening the drain valve handle one half turn. Leave for a few minutes, then slowly open the valve to the full open position.

  3. Close the drain valve and discard the oil in the filter pan. Then install the filter pan under the fryer, leaving out the filter screen assembly.

    To avoid personal injury, always wear PPE when cleaning vat and follow instructions on the cleaning solution.

    Always wear chemical splash goggles or face shield and protective rubber gloves when cleaning the vat as the cleaning solution is high in alkaline. Avoid splashing or other contact of the solution with your eyes or skins. If solution comes in contact with your eyes rinse thoroughly with cool water and see a physician immediately.

    Burn Risk

    Do not close lid with water and/or cleaner in vat. Water under pressure becomes superheated. When lid is opened, escaping water and steam can result in severe burns.

  4. Fill the vat to the level indicator with hot water. Add 4 to 8 ounces of dry fryer cleaner or 8 to 16 ounces of liquid cleaner to the water and mix thoroughly. The fry basket can be placed inside vat for cleaning.

  5. Turn main power switch to the POWER position set controls to 195ºF (90.5° C).

  6. When the READY light displays, and the solution temperature is at 195º F (90.5° C), immediately move the main power switch to OFF.

    In the event of cleaning solution boil over, immediately turn the power switch to OFF. Do not try to contain by closing the fryer lid or severe burns could result.

    NOTICE -

    Watch the cleaning solution constantly to make sure it does not boil over causing damage to controls.

    If the cleaning solution in the vat starts to foam and boil over, immediately turn the POWER Switch to OFF or damage to components could result.

  7. Let the cleaning solution stand for 15 to 20 minutes with the unit off.

  8. Pour a cup of hot cleaning solution, taken from the vat, into the condensation tower (steam stack) to keep it free and clean.

    NOTICE -

    To avoid equipment damage: do not use corrosive cleaners on the lid or lid hinge; do not use a metal scraper below the crackling ring.

    NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

    NOTICE -

    To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

  9. Using the fryer brush, scrub the inside of the vat, the lid liner, and around the countertop of the fryer.

  10. After cleaning, open the drain valve and drain the cleaning solution from the vat into the filter pan and discard.

  11. Replace the empty filter pan, close the drain valve and refill the vat with plain hot water to proper level.

  12. Add approximately 8 ounces of distilled vinegar and bring the solution to 195º F (90.5° C).

  13. Using a clean brush, scrub the interior of the vat and lid liner. This will neutralize the alkaline left by the cleaning compound.

  14. Drain the vinegar rinse water and discard.

  15. Rinse down the vat, using clean hot water.

    NOTICE -

    After cleaning vat, ensure that all components are dry before adding new oil.

  16. Thoroughly dry the filter pan, and the vat interior.

  17. Replace the clean filter assembly in the filter pan and install under fryer.

  18. Refill the fryer with fresh oil.
