Changing the Filter Envelope
The filter envelope should be changed after 10-12 filterings, or whenever it becomes clogged with crumbs. Refer to KFC’s Standards Library.
To avoid severe burns, use PPE when using filter rinse hose. |
The filter rinse hose and fitting will be hot. Use protective gloves or cloth when following this procedure or severe burns could result.

NOTICE - | Thoroughly dry all filter pan components before assembly. |
Move the COOK/PUMP switch to the OFF position.
Remove and empty the condensation drain pan.
Disconnect the filter union and remove the filter pan from beneath the vat.
Lift the filter screen assembly from the filter pan.
Wipe the oil and crumbs from the filter pan. Clean the filter pan with soap and water. Thoroughly rinse with hot water.
Unthread the standpipe from the filter screen assembly.
Remove the crumb catcher and clean thoroughly with hot water.
Remove the filter clips and discard the filter envelope.
Clean the top and bottom filter screen with soap and water. Rinse thoroughly with hot water.
Assemble the top filter screen to the bottom filter screen.
Slide the screens into a clean filter envelope.
Fold the corners in and then double fold the open end.
Clamp the envelope in place with the two retaining clips.
Replace the crumb catcher screen on top of the filter paper. Screw on the suction standpipe assembly.
Place complete filter screen assembly back into filter pan, replace clean crumb basket, and slide pan back into place beneath the fryer.
Connect the union by hand. Do not use a wrench to tighten.
Slide the condensation drain pan back into place. The fryer is now ready to operate.
