Decommissioning Fryers

A fryer should be decommissioned when one of the following occur:

  1. There is no documentation (i.e. Inspection Tag or Proof of Inspection) of the Annual Pressure Fryer Safety Inspection.

  2. There are any conditions that could be potentially hazardous that would prevent the Pressure Fryer from being operated safely.

Steps to Decommission Fryers

  1. Remove all food items from the fryer.

  2. Filter the fryer, if possible.

  3. After filtration, drain oil into suitable container for oil storage or dispose oil accordingly.

  4. Turn off fryers from the main ON/OFF switch. This is located on the front panel of the fryer.

  5. Turn off circuit breaker or unplug the unit.

  6. Wipe down the exterior and accessories of fryer within safety limits.

  7. Indicate with a brand approved "Do not use" sign or similar on the fryer.

  8. Notify Area Manager of the decommissioning and escalate accordingly.
