Changing the Filter Envelope

To avoid burns, use PPE when handling filter pan or filter pan lid.

NOTICE -

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

In order to assure good oil pumping performance, the filter envelope should be changed at least once per day. Stores open 24 hours a day, the envelope should be changed twice a day.

NOTE: If the filter envelope has not been changed, a reminder CHANGE PAD displays. Press the 1 button to cancel the message. It reappears every 4 minutes until the filter envelope has been changed.

  1. Ensure the power switch is ON.
  2. Open the door, and then push down on the filter pan stop and pullout the filter pan assembly, using the filter pan handle.
  3. Lift the pan cover from the filter pan.
  4. Unscrew the filter union nut from the standpipe.
  5. Pull stand pipe and screens from filter pan, and unscrew standpipe assembly from the screens.
  6. Lift the crumb catcher from the filter assembly, and wipe oil and crumbs from the crumb catcher.
  7. Clean the crumb catcher with soap and water, then thoroughly rinse with hot water.
  8. Pull retaining clips from envelope, pull envelope from bottom screen and discard envelope.
  9. Clean filter screen thoroughly with soap and water, and rinse thoroughly with hot water.
  10. Wipe the oil and crumbs from the filter pan. Clean the filter pan with soap and water, then thoroughly rinse with hot water.
  11. NOTE: Be sure that filter pan, bottom screen, crumb catcher, and the retaining clips are thoroughly dry before placing filter envelope into pan as water dissolves the filter envelope.

  12. Slide a new filter envelope over the bottom filter screen, aligning the hole in the envelope with the fitting on the bottom of the screen.
  13. Fold the corners in and then double fold the open end. Secure with sealer bar.
  14. To help prevent filter pump problems:

    • Properly install paper envelope over the filter screens.
    • Fold the open end of the envelope, and clamp with retaining clips so that crumbs cannot enter.
    • Pump oil, until no oil is coming from the nozzle.

  15. Place filter screen assembly into pan.
  16. Place crumb catcher onto assembly with the threads in the center hole.
  17. Hand tighten the standpipe onto the filter screen assembly.
  18. After it is tight, align to the standpipe to the filter union on pan, and hand-tighten ONLY to prevent damage or over-tightening.
  19. Place filter pan lid onto pan.
  20. Push the filter pan assembly back underneath the fryer, making sure the filter tube on the pan makes a good connection with the fitting underneath the fryer.
  21. Fryer is now ready for normal operation.
