Maintenance Schedule
NOTICE - | To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals. |
NOTICE - | Use a food grade fryer cleaner permitted by local health codes. |
NOTICE - | Clean brushes and utensils used for cleaning and cooking daily. |
As in all food service equipment, the Henny Penny open fryer does require care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

Clean exterior of fryer. | Daily |
Clean the caster wheels. | Daily |
Remove and clean the basket hanger. | Daily |
Clean and dry baskets. | Daily |
Perform daily filter of oil on each vat. | Daily |
Clean filter pan, install a new filter pad, lubricate the O-rings. NOTE: Replace O-rings if needed. | Daily |
Clean and dry night covers, and then place over vats to protect oil from contamination. | Daily |
Lubricate filter pan O-rings. | Every filter pad change. |
Lubricate oil reservoir O-rings. | When reservoir is removed. |
Change the oil. | When oil smokes, foams up violently, or tastes bad. |
Dispose of stale oil and replace with fresh oil. | As Required |
Deep clean the vat. | Every change of oil or quarterly. |
Clean behind the fryer. CAUTION!:Disconnect power by unplugging power cord, to prevent personal injury. | Weekly |
Replace filter pan O-rings. | Quarterly |
Inspect oil reservoir O-rings. | Quarterly |
