Maintenance Schedule

As in all food service equipment, the Henny Penny open fryer does require care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

Filtering Daily - every 3 to 4 loads
Change the filter envelope End of day or if clogged
Lubricate filter pan o-ring Every filter envelope change
Lubricate JIB (oil reserve) o-rings When reservoir is removed
Change the oil When shortening smokes, foams up violently, or tastes bad
Cleaning the frypot (vat) During oil change
Wipe down the exterior Daily
Clean the caster wheels Daily
Inspect filter pan o-rings Quarterly
Inspect oil reservoir o-rings Quarterly
Schedule annual inspection Annually - Contact distributor
