Operating with Product

NOTICE -

Do not use warped or bent trays.

As worn aluminum pans slide against the rails of the holding cabinet, they can leave behind traces of aluminum dust or small shavings. It is important to perform daily cleaning to prevent aluminum dust/shavings from getting onto product being held in the cabinet.

  1. Place the hot product on bun pans and insert between the cabinet racks.

  2. Serve the product first that has been in the cabinet the longest.

  3. Open the drawers only as necessary to load and serve the product.

The vent system limits the humidity level of the cabinet. The vent adjustments are very easy to follow. To achieve the desired crispness of fried chicken, the vent system should be set at 5 all the time.
