Daily Cleaning
Only perform this procedure when the unit is cool or severe burns may result. |
To avoid food contamination, discard warped and/or bent pans. Metal debris may cause personal injury. |

As worn aluminum pans slide against the rails of the holding cabinet, they can leave behind traces of aluminum dust or small shavings. It is important to perform daily cleaning to prevent aluminum dust/shavings from getting onto product being held in the cabinet.

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals. |

To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. |

Turn controls and water off, then disconnect electrical supply.
- Open doors to remove all trays and racks from unit. Take them to a sink to thoroughly clean.

Remove the water pan and baffle, discard any remaining water in the pan, and clean with a soft cloth, soap, and water.

Wipe interior and exterior of cabinet with damp cloth, soap, and water.
- Using a damp towel, wipe gaskets and door. Be sure that both gaskets and doors are free of grease build up.
- Wipe each tray runner top and bottom.

Wipe the control panel with a damp cloth. Do not splash water around controls.
NOTICE -
Ensure you install the racks correctly. Installing the lower racks in the upper rack location will lead to holding problems. The lower racks are shown below.

Open the doors and remove side racks. Clean the racks with soap and water.

Put the side racks and water pan back into the cabinet.

Leave at least one door open over night to allow the unit to thoroughly dry out.
