Manual Daily Filtering

This filtering procedure allows for a more thorough cleaning of the vat and should be done once a day. The vat can be filtered during any non-frying times.

Burn Risk

Slipping Hazard

To avoid personal injury, do not exceed filter pan capacity (1 vat or 2 split vats).To avoid overfilling the filter pan, drain only 1 vat at a time. Make sure the floor area around equipment is completely clean and dry to avoid slip risks.

  1. Check Filter Pan: A new filter pad should be used on the first filter of each day, but the same filter pad can be used the rest of the day, except for fish vats. After filtering a fish vat, be sure to change the filter pad.

  2. Make sure filter pan cover is in place, filter drain tube is secured, and filter pan is pushed in and locked into place. If filter pan and cover are not latched into place, “CHK PAN” displays.

  3. Press and hold the filter button until “1.EXPRESS FILTER?” displays.

  4. Press the right arrow button and “2.DAILY FILTER?” displays.

  5. Press “✓” button for yes and “CONFIRM”, followed by “YES NO” displays.

  6. Press “✓” button for yes and “OPEN DRAIN” displays. Pull out on the drain knob, “DRAINING” displays and oil drains from the vat, or press “X” button for no and controls return to normal operation.

  7. Once oil has drained from vat, remove basket support from vat.

    NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

    NOTICE -

    To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

    NOTICE -

    To avoid damaging elements, do not scrape or scrub with abrasive tools or pads. Scratches on the elements may cause breading to stick to them and burn.

    NOTICE -

    To avoid equipment damage, do not use element lifting tool near the high limit bulb.

    Proper Element Lift Technique

  8. Use the lift tool and lift the hinged element from the vat to clean the bottom of the vat.
  9. Scrape or brush the sides and the bottom of the vat. Be careful not to damage the sensing probes.

  10. Once vat is clean, “SCRUB VAT COMPLETE?” “YES NO” displays. Press “✓” button for yes and “WASH VAT” “YES NO” displays.

  11. Press “✓” button, “WASHING” displays and oil circulates through vat for a few minutes. When wash cycle is complete, “WASH AGAIN?” “YES NO” displays.

    NOTE: The Wash step of the first filter on a new filter pad lasts an extra 45 seconds to “break in” the pad.

  12. Press “✓” button for yes if another wash is needed, otherwise press “X” button for no and “CLOSE DRAIN” displays. Push in on drain knob to close drain, “RINSING” displays, and vat fills with oil.

  13. Once vat is filled, “OPEN DRAIN” displays. Pull out on drain knob to open the drain and “RINSING” displays. When rinsing is complete, “RINSE AGAIN?” “YES NO” displays.

  14. Press “✓” button for yes if another rinse is needed, otherwise press “X” button for no. “POLISH” “YES” displays.

  15. Press “✓” button for yes and oil is “polished” by circulating it through the filtering system. “5:00 X=STOP” displays. If desired, press “X” button to stop the polishing, otherwise the oil is polished for 5 minutes.

  16. Once the oil is polished, “FILL VAT?” “YES” displays. Press “✓” button and “CLOSE DRAIN” displays. Push in on drain knob to close drain, “FILLING displays” and vat then re-fills with oil.

  17. Once full, “IS POT FILLED?” “YES NO” displays. Press “✓” button for yes; fryer returns to normal operation.

  18. If “X” button is pressed, “FILLING” displays. You can try to fill vat 4 times; then “ADD QUIT” displays. Press and hold “✓” button and BIB pump runs filling vat from BIB. When vat is full, press “X” button and “IS POT FILLED?” “YES NO” displays. Press “✓” button for yes and fryer returns to normal operation.

Auto Daily Filtering

To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

NOTICE -

Leaving cleaning utensils in the drain valve will result in equipment damage.

  1. Check Filter Pan:

    • Use a new filter pad on the first filter of each day, but the same filter pad can be used the rest of the day, except for fish vats.

    • Change the filter pad after filtering a fish vat.

    • Make sure that the filter pipe is tightly connected, and that the filter pan is as far back under fryer as it will go and the filter pan cover is in place. If the filter pan or cover is not in place, “CHK PAN” displays.

  2. Make sure oil is hot: The best results are obtained when the frying oil is filtered at the normal frying temperature.

  3. Press and hold the filter button  until “1.AUTO FILTER?” displays.

  4. Press and release the down arrow button and “2.MAINT FILTER?” displays.

  5. Press “✓” button for yes and “MAN FILTER” “YES NO” displays.

  6. Do one of the following:

    • Press “✓” button for yes and “DRAINING” displays and the oil drains from the vat.

    • Press “X” button for no and controls return to normal operation. (If control suspects oil in filter pan “CAUTION IS THERE OIL IN PAN?” “YES NO” displays. Ensure filter pan is empty before proceeding.)

    If the oil does not drain completely and immediately, use the white cleaning brush to push through any drain clogs. Remove the brush immediately, before the drain closes to prevent damage to the drain or brush.

  7. Once oil has drained from vat, remove the basket support from the vat.

  8. Clean the vat:

    • Use the Hi-Temp Pad Holder, pad, and a small amount of KAY QSR Fryer Cleaner to scrub the walls, corners and bottom of the inside of the vat.

    • Use the Hi-Temp Detail Brush to clean in between and underneath burner tubes, corners of vats and other hard-to-reach areas. Be careful not to damage sensing probes.

    NOTICE -

  9. Once the vat is clean and “SCRUB VAT COMPLETE?” “YES NO” displays. Press ✓ button for “YES” and “WASH VAT” “YES NO” displays.

  10. Press “✓” button and “WASHING” displays. The oil circulates through the vat for several minutes. Once the wash cycle is complete, “WASH AGAIN?” “YES NO” displays.

  11. Do one of the following:

    • Press “✓” button for yes if another wash is needed.

    • Press “X” button for no and “RINSING” displays and fryer automatically rinses the vat.

    When rinsing is complete, “RINSE AGAIN?” “YES NO” displays.

  12. Do one of the following:

    • Press “✓” button for yes if another rinse is needed

    • Press “X” button for no.

    “POLISH?” “YES” displays.

  13. NOTICE -

    Leaving cleaning utensils in the drain valve will result in equipment damage.

  14. Once oil is polished, “CLOSE DRAIN” “YES NO” displays and a 3 beep alarm sounds for 30 seconds.

  15. Do one of the following:

    • Ensure the drain valve is clear of all cleaning utensils and press “✓” button.

    • Press “X” button. The drain valve remains open for another 30 seconds.

  16. “FILL VAT?”, along with “YES” displays. Press “✓” button; “FILLING” displays and vat fills with oil.

  17. Once full, “IS POT FILLED?” “YES NO” displays. Press “✓” button for yes and fryer returns to normal operation. If “X” button is pressed, “FILLING” displays and pump runs for 30 seconds and stops, “IS POT FILLED?” “YES NO” displays. After 3 tries, “ADD QUIT” displays. Press and hold “✓” button to fill vat and release. Press “X” button and “IS POT FILLED?” “YES NO” displays. Press “✓” button and controls return to normal operation.If the vat is not full, follow Troubleshooting a Daily Filter Error.

Troubleshooting a Daily Filter Error

Follow this procedure when the unit is not successful in filling the vat.

  1. If the vat is not full, press “X” button. The unit tries to fill the vat 3 times. If unsuccessful, “ADD QUIT” displays.

  2. If “ADD QUIT” displays, press and hold “✓” button to fill vat.

  3. When vat is full, release “✓” button.

  4. Press “X” button. “IS POT FILLED?” “YES NO” displays.

  5. Press “✓” button and controls return to normal operation.
