Manual Clean-Out Mode

To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

Burn Risk

To avoid burns, use PPE when filtering oil or cleaning vat.

Slipping Hazard

To avoid personal injury, do not exceed filter pan capacity (1 vat or 2 split vats).To avoid overfilling the filter pan, drain only 1 vat at a time. Make sure the floor area around equipment is completely clean and dry to avoid slip risks.

NOTICE -

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

NOTICE -

To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

NOTE: Do not cook product in adjoining vat when clean-out mode is in progress to avoid contaminating oil and/or product. Cover adjoining vats to avoid accidentally contaminating oil with fryer cleaning solution.

  1. Press and hold the filter button until “1.EXPRESS FILTER?” displays.

  2. Press and release the right arrow button several times until “CLEAN-OUT” displays.

  3. Press “✓” button; “OIL RMVD” “YES NO” displays.

  4. If oil has already been removed, press “✓” button and control skips down to step 8. If vat still has oil, press “X” button; “DISPOSE?” “YES NO” displays. Press ✓ button to dispose of the oil, or press “X” button to exit Clean-Out Mode.

  5. “IS DISPOSAL UNIT IN PLACE” “YES NO” displays. If “NO” is selected, “INSERT DISPOSAL UNIT” displays. Once disposal unit is in place, press button for “YES”; “OPEN DRAIN” displays. Open drain, “DRAINING” displays and oil drains from vat. “VAT EMTY” “YES NO” displays. Press “✓” button when ready; “CLOSE DRAIN” displays; close drain.

  6. Bulk Oil Systems Only! “CHK PAN” displays if the filter pan is missing. Once pan is in place, “OPEN DRAIN” displays. Pull out drain knob and “DRAINING” displays and oil drains from vat. “✓=PUMP” “X=DONE displays. Press “✓” button, “DISPOSING” displays and oil is pumped from filter pan. Once pan is empty, press “X” button twice and close drain.

  7. “SOLUTION ADDED?” “YES NO” displays. Fill vat with hot water to 1 in. (25 mm) above the top fill line, add 4 oz.. (0.12 liters) of open fryer cleaner, and mix thoroughly. Press “✓” button and “START CLEAN” “YES NO” displays.

  8. Press “✓” button, “CLEANING” displays and a count-down timer. Heat regulates to 195°F (91°C) for this step for one hour.

    To stop cleaning cycle early, press “X” button; “QUIT CLEANING” “YES NO” displays. Press “✓” button to cancel the rest of countdown time and proceed to the rinse steps.

    Add water as needed during cleaning process to keep solution 1 in. (25 mm) above the top fill line.

  9. Using the open fryer brush, scrub the inside of the vat. At the end of the one hour, “CLN DONE” displays and beeps. Press “✓” button and “REMOVE SOLUTION FROM VAT” displays.

  10. Empty filter pan of internal filtering components and move components to a sink to be cleaned. Return empty filter pan and cover to fryer, making sure it is pushed securely into place and the latch fully engaged.

    To avoid severe burns:

    • Always wear PPE when using cleaning solution.

    • Do not pump cleaning solution or water from drain pan into vat or oil lines.

    Call out "hot water" when carrying hot water to the fryers. Failure to do so may result in minor burns.

  11. Pull out drain knob and drain half the vat contents into filter pan. Remove filter pan from unit and dispose of cleaning solution.

  12. Return empty filter pan to fryer and press “✓” button. “VAT EMTY” “YES NO” displays.

  13. Once vat is empty, press “✓” button and “SCRUB VAT COMPLETE” “YES NO” displays. Use brush and scour pad to clean vat, if needed.

  14. Once vat is clean, press the “✓” button and “RINSE VAT” displays. (If drain is not open, “OPEN DRAIN” displays. Open the drain.)

  15. Pour clean water and approximately 8 oz. (0.24 liters) of distilled vinegar solution into vat to rinse vat and allow rinse water to drain into filter pan. Rinse at least 3 times, but be careful not to overfill the filter pan. “RINSE COMPLETE” “YES NO” displays.

  16. Once vat is completely rinsed, press the “✓” button and “CLEAR SOLUTION FROM OIL LINES” “✓=PUMP” “X=DONE” displays.

  17. To ensure no cleaning solution remains in the oil lines, press and hold “✓” button for a few seconds. Once lines are clear, press “X” button and VAT DRY?” “YES NO” displays. Press “✓” button and “CLOSE DRAIN” displays. Push drain knob in to close drain. Controls return to normal operation.

  18. Pull filter pan from under fryer and dispose of rinse water.

  19. Thoroughly dry the vat with a towel, and then press the “✓” button. Controls return to normal operations.

  20. Ensure drain is closed.

  21. Ensure the inside of the vat, the drain valve opening, and all the parts that come in contact with the new oil are as dry as possible.

  22. Clean and thoroughly dry the filter pan assembly and return, with new filter pad, to the fryer. Fill vat with oil following the instructions from Filling or Adding Oil.

  9. Remove the disposal shuttle and empty filter pan of internal filtering components and move components to a sink to be cleaned. Return empty filter pan and cover to fryer, making sure it is pushed securely into place and the latch fully engaged.

  10. Press “✓” button, “CLEANING” displays and a count-down timer. Heat regulates to 195°F (91°C) for this step for one hour.

  11. Using a 1/2 gal. (2 liter) stainless steel pitcher, remove the solution from the vat, pouring it into a heat-resistant pail for disposal. Any remaining solution can be drained into the filter pan for disposal.

  12. Using the open fryer brush (never use steel wool), scrub the inside of the vat. At the end of the one hour, “CLN DONE” displays and beeps. Press “✓” button and “REMOVE SOLUTION FROM VAT” displays.
