Preventative Maintenance Schedule
As in all food service equipment, the Henny Penny open fryer does require care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

Perform daily filter of oil on each vat. |

Clean filter pan, install a new filter pad, lubricate the O-rings. NOTE: Replace O-rings if needed. |

Clean and dry night covers, and then place over vats to protect oil from contamination. | Daily |
Change the oil. |
When oil smokes, foams up violently, or tastes bad. |
Dispose of stale oil and replace with fresh oil. |

Deep clean the vat. |

Clean behind the fryer. CAUTION!: Disconnect power by unplugging power cord, to prevent personal injury. | Weekly |
