Using Deep Clean Mode

Burn Risk

To avoid burns, use PPE when filtering oil or cleaning vat.

Be sure to use all McDonalds approved safety equipment including, apron, face shield and gloves. Never begin filtering or Deep Clean process until you’re wearing all safety gear. Hot oil can cause severe burns.

Objects can fall and splash hot oil or hot water while performing this procedure. Cover the vat with a sheet pan or drain the vat and allow to cool otherwise serious burns may result.

  1. Cover adjoining vats to avoid accidentally contaminating oil with fryer Deep Clean solution.

  2. Press and hold the Temperature and Information buttons until LEVEL - 1 , followed by ENTER CODE display.

  3. Using the first 4 product buttons, enter code 1, 2, 3, 4. “PRODUCT” and “SELECTN” displays.

  4. Press the Down arrow button twice and “DEEP CLEAN” displays.

  5. Press the Confirm button and “DEEP CLN?”, along with “YES NO” display. Press the Confirm button. Full vat fryers, go on to step 7.

  6. Split vat fryers only! “LEFT RGHT” displays , asking you to select which vat will be cleaned.

    1. Choose one of the following:

      • Press the Confirm button to select left vat.

      • Cancel button for the right vat.

        “OIL RMVD” “YES NO” displays.

    2. Choose one of the following:

      • If oil has already been removed, press the Confirm button and control skips down to “Solution Added?” step 10.

      • If vat still has oil, press the Cancel button and “DISPOSE” “YES NO” displays.

    3. Choose one of the following:

      • Press the Confirm button to dispose of the oil.

      • Press the Cancel button to exit Deep Clean Mode. (If control suspects oil in drain pan “CAUTION IS THERE OIL IN PAN? YES NO” may display. Ensure filter pan is empty before proceeding.)

  7. JIB systems only! “IS DISPOSAL UNIT IN PLACE?” “YES NO” displays. If “NO” is selected, “INSERT DISPOSAL UNIT” displays. Once disposal unit is in place press the Confirm button for YES and “DRAINING” displays and oil drains from vat.

  8. Bulk systems only! “CHK PAN”displays if the filter pan is missing. Once pan is in place, “DRAINING” displays and oil drains from vat. Once vat is empty, open the door that has the RTI switch (at left) and press the “DISPOSE” button on the RTI switch until filter pan is empty.

  9. “VAT EMTY”, “YES NO” displays. Press the Confirm button when vat is empty.

  10. “SOLUTION ADDED?” “YES NO” displays. Mix McD Heavy-Duty Degreaser Solution in the vat to be cleaned and fill vat to 1 in. (25 mm) above the top fill line. Then, press the Confirm button and “START CLEAN” “YES NO” displays.

  11. Press the Confirm button “CLEANING” , and a countdown timer display. Heat regulates to 195°F (91°C) for this step for one hour.

    Add water as needed during cleaning process to keep solution 1 in.(25 mm) above the top fill line.

    To stop the cleaning cycle early, press the Cancel button. “QUIT DEEP CLN” “YES NO” displays. Press the Confirm button to cancel the rest of the countdown time and proceed to the rinse steps.

  12. Follow McDonalds vat cleaning procedure and at the end of the one hour, “CLN DONE” displays and beeps. Press the Confirm button and “REMOVE SOLUTION FROM VAT” displays.

  13. Empty filter pan of internal filtering components, take the components to a sink to be cleaned. Return the empty filter pan and cover to the fryer.

    To avoid severe burns:

    • Always wear PPE when using cleaning solution.

    • Do not pump cleaning solution or water from drain pan into vat or oil lines.

  14. Using a 1/2 gal. (2 liter) pitcher, remove solution from vat, pouring it into a heat-resistant bucket for disposal. Any remaining solution can be drained into the filter pan for disposal, in step 14 below. Press the Confirm button and “VAT EMTY” “YES NO” displays.

    Fire Risk

    To avoid fire:

    • Do not allow baskets to impact heating elements.

    • Do not exert pressure on heating elements.

    Impact to the heating elements may shift or stretch coils and cause a fire.

    NOTICE -

    To avoid damaging elements, do not scrape or scrub with abrasive tools or pads. Scratches on the elements may cause breading to stick to them and burn.

    NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

    NOTICE -

    To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

  15. Once vat is empty, press the Confirm button and “SCRUB VAT COMPLETE” “YES NO” displays. Use the Hi-Temp Detail Brush to clean heating elements and use the Hi-Temp Pad Holder and Pad to clean the inside of the vat walls, corners and top.

  16. Once vat is clean, press the the Confirm button and “RINSE VAT” displays and the drain opens.

  17. Pour clean water into vat to rinse vat and allow rinse water to drain into filter pan. Rinse at least 3 times, but be careful not to overfill the filter pan. “RINSE COMPLETE” “YES NO” displays.

  18. Once vat is completely rinsed, press the the Confirm button and “CLEAR SOLUTION FROM OIL LINES” “the Confirm=PUMP” “X =DONE” displays. To ensure no cleaning solution remains in the oil lines, press and hold the Confirm button for a few seconds. Once lines are clear, press X button and VAT DRY?” “YES NO” displays.

    Burn Risk

    To avoid burns, do not allow water to mix with the frying oil.

  19. Pull filter pan from under fryer and empty, using the 1/2 gal. (2 liter) pitcher and pouring it into a heat-resistant bucket for disposal.

  20. Thoroughly dry the vat with a towel, and then press the the Confirm button and controls return to normal operation.

Deep Clean tracking will lockout from cooking if a Deep Clean is not performed within a default range of days.

  • After 90 days - Cooking is allowed and Deep Clean will be prompted at 21:00 (9:00 pm) each day for up to 10 days. The prompt will clear once a Deep Clean is performed.

  • After 100 days - Cooking is not allowed due to Deep Clean lockout. Cooking will be allowed once a Deep Clean is performed.
