Burn Risk

To avoid burns, use PPE when filtering oil or cleaning vat.

Be sure to use all McDonalds approved safety equipment including, apron, face shield and gloves. Never begin filtering or Deep Clean process until you’re wearing all safety gear. Hot oil can cause severe burns.

To avoid personal injury, do not move fryer or filter pan while containing hot oil. The filter pan must be as far back under fryer as it will go, and the cover in place. Be sure the hole in the cover lines up with the drain before opening the drain.

A new filter pad should be used on the first filter of each day, but the same filter pad can be used the rest of the day, except for fish vats. After filtering a fish vat, the filter pad MUST be changed.

  1. Ensure the filter pipe is tightly connected, the filter pan is as far back under fryer as it will go, and the filter pan cover is in place. If the filter pan or cover is not in place, “CHK PAN” displays.

  2. Ensure oil is hot: The best results are obtained when the frying oil is filtered at the normal frying temperature.

  3. Press and hold the Filter button (on either side) until display “1.QUICK FILTER?” displays.

  4. Press and release button and display shows “2.MAINT FILTER?”.

  5. Press the Confirm button for YES and "DRAIN PAN READY?" displays.

  6. Press the Confirm button for YES and “MNT FILTER” “YES NO” display.

    Purge valves are available on select units for solid oil. Perform step 7 if purge valve is available, otherwise continue to step 8.

  7. “CLOSE PURGE VALVE, followed by “CONFIRM” displays. Turn the black purge valve handle to close the valve and press the Confirm button.

  8. Choose one of the following:

    • Press the Confirm button for YES to drop oil, “DRAINING” displays and the oil drains from the vat.

    • Press the Cancel button for NO and controls return to normal operation. (If control suspects oil in drain pan “CAUTION IS THERE OIL IN PAN? YES NO” may display. Ensure filter pan is empty before proceeding.)

    Fire Risk

    To avoid fire:

    • Do not allow baskets to impact heating elements.

    • Do not exert pressure on heating elements.

    Impact to the heating elements may shift or stretch coils and cause a fire.

    NOTICE -

    To avoid equipment damage, do not use element lifting tool near the high limit bulb.

  9. Once oil has drained from vat, use the lift tool and lift the hinged element from the vat to clean the bottom of the vat.

    NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

    NOTICE -

    To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

  10. Use the Hi-Temp Pad Holder, pad, and a small amount of KAY QSR Fryer Cleaner to scrub the walls, corners and bottom of the inside of the vat. Use the Hi-Temp Detail Brush to remove soil built up and debris from coils, corners of vats and other hard-to-reach areas. Be careful not to damage sensing probes.

  11. Once vat is clean, “SCRUB VAT COMPLETE?” “YES NO” displays, press the Confirm button for YES.

    “OPEN RETURN VALVE TO WASH VAT” “CONFIRM” displays.

  12. Lower element, turn the yellow return valve handle to open valve, and then press the Confirm button.

    “WASHING” displays. Oil circulates through vat and once wash cycle is complete, “CLOSE DRAIN” displays.

    Drain Valve

  13. Turn red drain handle to close drain and then “IS POT FILLED?” followed by “YES NO” display.

  14. Once vat is full press the Confirm button and “CLOSE RETURN VALVE” followed by “CONFIRM” display.

    Return Valve

  15. Using yellow handle, close return valve and then press the Confirm button. “OPEN DRAIN” displays.

  16. Turn red handle to open drain, RINSING displays and fryer automatically rinses vat. When rinsing is complete, “RINSE AGAIN?” “YES NO” displays.

  17. Choose one of the following:

    • Press the Confirm button for YES if another rinse is needed,

    • Press Cancel button for NO. “OPEN RETURN VALVE TO POLISH?” followed by “CONFIRM" display.

  18. Turn the yellow return valve handle to open valve. Press the Confirm button for YES, oil is “polished” by circulating it through filtering system.

    “5:00 STOP” displays and the oil is circulated through the filter system for 5 minutes.

  19. Once the oil is polished, the “CLOSE DRAIN” displays. Turn red drain handle to close drain. “FILLING” displays and vat fills with oil. Let oil fill until it starts to bubble. Let oil bubble for about 15 seconds to ensure all oil is out of pan.

  20. Once full, “IS POT FILLED?” “YES NO” displays. Choose one of the following:

    • Press the Confirm button for YES and “CLOSE RETURN VALVE” , followed by “CONFIRM” display.

    • If the Cancel button is pressed, “FILLING” displays and pump runs for 30 seconds and stops, “IS POT FILLED?” “YES NO” displays. After 3 tries, “ADD” “QUIT” displays. Press and hold the Confirm button to fill pot and release. Press the Cancel button and “IS POT FILLED?” “YES NO” displays. Press the Confirm button and fryer returns to normal operation.

  21. Turn the yellow return handle to close valve, and press the Confirm button. “OPEN PURGE HANDLE” followed by "CONFIRM" display.

    Purge valves are available on select units for solid oil. Perform step 22 if purge valve is available, otherwise continue to step 23.

  22. Close the black purge handle and then press the Confirm button. Ensure oil is level with the top indicator line on rear wall of vat.

  23. Press the Heat button to turn on heat and continue cooking.
