Cleaning the Vat

After the initial installation of the open fryer as well as during every change of oil the vat should be thoroughly cleaned as follows:

To avoid severe burns:

  • Always wear PPE when using cleaning solution.

  • Do not pump cleaning solution or water from drain pan into vat or oil lines.

To avoid personal injury, always wear PPE when cleaning vat and follow instructions on the cleaning solution.

Always wear chemical splash goggles or face shield and protective rubber gloves when cleaning the vat as the cleaning solution is high in alkaline. Avoid splashing or other contact of the solution with your eyes or skins. If solution comes in contact with your eyes rinse thoroughly with cool water and see a physician immediately.

Use high quality liquid frying oil in the open fryer. Some low grade oils have a high moisture content which causes foaming and boiling over.

NOTICE -

To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

 

  1. Ensure the drain pan is empty of hot oil and remove, then set aside.
  2. Turn the main power switch off, and then push the Oil Disposal Shuttle (ODS) as far back under the fryer as it will go, ensuring the ODS aligns with the fryer’s drain.
  3. Open the drain valve one half-turn so the oil drains slowly and doesn’t splash into the ODS.
  4. Allow to drain for a few minutes, then slowly open the valve to the fully open position.
  5. Close the drain valve when the shuttle is full. Do not overfill.
  6. Discard the oil using the ODS. Repeat steps 3 through 6 as necessary until the vat is empty.
  7. Remove the filter and screen assembly from the filter pan. The filter union could be hot, handle with care.
  8. Ensure the drain valve is fully closed, and then place the fry basket in the vat.
  9. Place the filter pan with lid under the fryer.
  10. Fill the vat to the level indicator with hot water, and then add 4 ozs. (0.12 liters) of open fryer cleaner to the water and mix thoroughly.
  11. Turn the main power switch to the ON position and set temperature to 195F (90.5C).
  12. When the solution reaches 195F (90.5 C), turn the main power switch to the OFF position.
  13. Let the cleaning solutions stand for 15 to 20 minutes with the power off.
  14. Using the open fryer brush (never use steel wool) scrub the inside of the vat.
  15. After cleaning, open the drain valve and drain cleaning solution from the vat into the filter drain pan and discard.
  16. Replace the empty filter drain pan, close the drain valve, and refill the vat with plain hot water to the proper level.
  17. As required by fryer cleaner, add approximately 8 oz. (0.24 liters) of distilled vinegar. Use the Clean-Out Mode or bring the solution back up to 195F (90.5C).
  18. As required by fryer cleaner, using a clean brush, scrub the interior of the vat. This neutralizes the alkaline left by the cleaning compound.
  19. As required by fryer cleaner, drain the vinegar rinse water and discard.
  20. Rinse down the vat using clean, hot water.
  21. Thoroughly dry the vat, filter drain pan and components, fry basket, etc. making sure all the parts that contact the new oil are as dry as possible.
  22. Replace the clean filter screen assembly in the pan, replace cover, and install filter drain pan under open fryer.
  23. Refill the vat with fresh oil.
