Daily Start-up

The following steps must be performed daily:

  1. Plug in equipment if it was unplugged overnight. Ensure the plug is fully seated into the receptacle.

  2. Check the fryer's oil and ensure it is filled to the proper level in each vat. Room temperature oil should be at the lower level line, cooking temperature oil at the upper level line.

  3. Overflow Risk

    • The oil may be stirred only during the morning start up procedure. Do not stir the oil at any other time.

    • Moisture and crackling settles at the bottom of the vat during normal operation. Manually stirring the oil brings the water and hot oil into contact.

    • Ensure the fryer is level.

    • Ensure the oil is at the appropriate level. Oil should never be above the upper vat “fill” line.

    • Failure to follow these instructions can result in oil overflowing the vat which could cause serious burns, personal injury, fire, and/or property damage.

  4. Turn power switch ON. Fryer will automatically advance through Start-up mode for approximately 15 to 20 minutes.

  5. If the oil is below 180° F (82° C), with the Main Power switch in the ON position, the display flashes START UP and MELT. The oil heats slowly to prevent scorching of the oil. The heat cycles on and off to slowly heat the oil. When the oil temperature reaches 215° F (102° C), Melt mode terminates and the fryer begins heating up to the temperature of 360° F (182° C) 320°F (160°C). During Start-up, the display informs the user by displaying a bar graph of the progress of the startup process. These stages consist of the following:

    • Melt - Melt mode and Top Off

    • The duration depends on the temperature of the oil at the initial start and the programmed setpoints.

    • Once start-up is complete, the display goes to the main cook menu and is ready for operations.

  6. Slowly open and check ATO reservoir and fill, if needed. Oil should be filled to the level line. Open and close slowly to prevent spilling.

  7. Stir the oil before the first use of the day as it heats up from a cold start. Be sure to stir down into the bottom of the vat.
  8. Check the filter pan to ensure it is clean and reassembled.

  9. If the oil was not filtered the night before at shutdown, filter the oil now once the cooking temperature is reached. Refer to Filtering Instructions.
