Changing the Filter Envelope
The filter envelope should be changed after 10–12 filter cycles or whenever it becomes clogged with crumbs. Proceed as follows:

Unlatch and pull out the filter pan from under the vat.
-
Remove the filter pan lid.
-
Lift the screen assembly from the filter pan.
-
Wipe the oil and crumbs from the filter pan. Clean the filter pan with soap and water, then thoroughly rinse with hot water.
-
Remove the filter screen and the clip holding the filter paper.
-
Gently slide the filter paper from the screen. Take care not to get crumbs in the screen. Discard filter paper.
-
Clean the top and bottom filter screen with soap and water. Rinse thoroughly with hot water.
-
Slide a filter envelope on to the filter screen. Make sure to center the threaded part of the filter screen into the center of the filter paper. Take care to not tear the filter envelope.
-
Fold-over the end of the filter envelope, and then slide a handle-clamp over the end. Ensure the handle faces the center plug.
-
With the filter screen attached, position the pick-up tube so that the guide slides in to the holder bracket notches.
-
Replace the crumb basket into the filter pan.
-
Replace the lid onto filter pan. Move the lid back and forth to ensure it is placed correctly. It should be captured on the pan via brackets on the underside of the lid.
-
Slide the filter pan back under the fryer until the lid latch latches into place.
NOTE: The lid may need to be pushed rearward for proper latch engagement.
- Fryer is now ready for normal operation.
