Resetting the High Limit

The high temperature limit control is a safety, manual reset control, which senses the temperature of the oil. If the oil temperature exceeds 425° F (218° C), the switch opens and shuts off the heat to the vat. Common reasons this can happen:

  • Vat is turned on with low or no oil.

  • Quick filtering is skipped and crumbs build up on the heater.

  • Deep cleaning is skipped and carbon builds up on the heater and high limit probe.

To reset the high limit, follow these steps:

  1. Wait until the temperature of the oil drops to a safe operation limit.

  2. Check the filter pan to make sure the crumb basket is empty, the filter is clean, and the O-rings are in good condition.

  3. Perform a Quick Filter.

  4. Add oil to the vat, if needed.

  5. To manually reset the control, press and hold (for 5 seconds) the red Reset button located under the control panel, in front of the fryer. Once the Reset button is pressed, heat is supplied to the vat.

    If these steps have been followed and the high limit still does not reset or trips continuously, call for service.
