Cleaning Daily
The UHC must be cleaned daily to remain sanitary. Navigation: Home > GO > Cleaning mode. See Operating Controls.
Tap the Lock icon to unlock editing. A password screen displays. Type 1122, and then tap the Green Checkmark to continue, or Back arrow to exit without making a change. When finished, tap the Lock icon to lock editing. |
Accessing Cleaning Mode
Daily, use Cleaning Mode to cool down the shelves to 120°F (49 °C) to perform a thorough cleaning of the holding cabinet.
NOTE: if starting cleaning mode while the unit is cold, shelves will heat to 120°F (49 °C).
- Tap the Cleaning Mode button. Enter Cleaning Mode displays.
- Tap the Green Checkmark to begin the cool down cycle or Red X to cancel. If you tap the checkmark to continue, the Cooling Down screen displays.
- Once the screen turns green and Safe to Clean displays, clean the holding cabinet.
Cleaning the Racks, Trays, and Shelves
IMPORTANT: Racks should be cleaned every four hours.
Once the shelves are cool, do the following:
- Once cooled, remove trays and racks, wash in sink or warewasher.
- If using warewasher, skip to step 4.
- If washing in sink, do the following:
- Place trays and tracks into wash compartment of the sink filled with fresh hot (110-120°F) APSC Solution.
- For heavy soil buildup, pre-spray with Super Contact Cleaner; allow to soak for 10 minutes.
- Use small wares cleaning brush to remove all soil buildup from wire racks. NOTE: Use a no-scratch pad to scrub trays.
- Rinse and sanitize all items; sanitize in solution for one minute; allow to air dry.
- Fill a clean bucket with hot (110-120°F) APSC Solution.
- Dip Hi-Temp Multi-use tool pad into APSC Solution; shake excess solution off pad into bucket.
- Scrub inside of each UHC cabinet shelf with Hi-Temp Multi-use tool with Pad.
- Repeat for all UHC shelves.
- Remove Multi-use pad, and then set aside.
- Retrieve white universal pad from clean towel bucket and wring it out thoroughly.
- Slide white universal pad onto tool.
- Use white universal pad to wipe out and rinse UHC shelves; repeat for all shelves.
NOTE: Rotate items to allow cleaning and sanitizing of all surfaces.
NOTE: Failure to shake out all excess solution from pad, can result in permanent damage to UHC electrical components.
NOTE: Make sure to wring out white universal pad before using in UHC shelves.
Cleaning the Holding Cabinet Exterior
- Spray a clean sanitizer-soaked towel with peroxide multi-surface cleaner and disinfectant solution.
- Wipe exterior of cabinet.
- Discard towel into soiled towel bucket after use.

Exit clean mode by tapping the back arrow, and then the green checkmark.
Note: The unit must reheat the shelves to return to normal operation, about 35 min.
- Wash, rinse, and sanitize tools at wash sink.
