Using Deep Clean Mode

Burn Risk

To avoid burns, use PPE when filtering oil or cleaning vat.

Objects can fall and splash hot oil or hot water while performing this procedure. Cover the vat with a sheet pan or drain the vat and allow to cool otherwise serious burns may result.

  1. Cover adjoining vats to avoid accidentally contaminating oil with fryer Deep Clean solution.

  2. Follow KFC vat cleaning procedure.

  3. Empty filter pan of internal filtering components, take the components to a sink to be cleaned. Return the empty filter pan and cover to the fryer.

    Fire Risk

    To avoid fire:

    • Do not allow baskets to impact heating elements.

    • Do not exert pressure on heating elements.

    Impact to the heating elements may shift or stretch coils and cause a fire.

    NOTICE -

    To avoid damaging elements, do not scrape or scrub with abrasive tools or pads. Scratches on the elements may cause breading to stick to them and burn.

    NOTICE -

    To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

    NOTICE -

    To avoid component damage, do not use pressurized water or a steam cleaner to clean unit. After cleaning vat, ensure that all components are dry before adding new oil.

  4. Once vat is clean, ensure the filter pan and cover are in place.

  5. Turn red drain valve handles to open drain.

    Burn Risk

    To avoid burns, do not allow water to mix with the frying oil.

  6. Pull filter pan from under fryer and empty.

  7. Thoroughly dry the vat with a towel.

  8. Turn red drain valve handle to close drain.

  9. Fill vat with fresh oil:

    • To the lower line on the back of the vat, if cool.

    • To the upper line on the back of the vat, if hot.
