Setting Up Fryer

The initial start-up of the fryer should be performed with store managers and as many crew members as possible. This will ensure all employees have received the proper instruction and understand how to use the equipment correctly.

  1. Check the unit for damage.

  2. Confirm the electric type is correct.

  3. Unlock front casters and point in forward direction to move fryer. Place the fryer in position, level the fryer, and tighten locking nut when the fryer is in cooking location.

  4. Using the carabiners supplied, connect power cord tethers to hooks on fryers and wall.

  5. Perform SETUP on all Controls.

  6. Rinse, drain, and dry all vats.

  7. Wash and dry all filter pan parts, ATO box, racks, and baskets prior to oil usage.

  8. Fill ATO reservoir (Auto Top Off) with oil.

  9. Locate main power switch for each vat. All other functions are on the Control Panel.

  10. Become familiar with the Control Panel and how to select each menu. Then, review basic cooking operation in the Chick-Fil-A operation manual.

  11. Fill vat to cold oil mark (bottom indicator). Allow fryers to heat to set point and verify temperature.

  12. Verify that oil level tops off from Auto top off reservoir for each vat.

  13. Verify that all filter parts (filter pan, filter screen, filter envelope, filter clips, pick-up tube, crumb basket, and O-rings) are present.

  14. Visually inspect the oil drain and return system to ensure all connections are tight.

  15. To move hot oil to the empty vat, access the FILTER MENU to drain, close the drain valve, and FILL FROM PAN on the adjacent vat.

  16. Locate the red High Limit Reset button under the control panel. When the fryer senses the oil temperature exceeds 425° F (218° C), the heat to the vat will shut off. When the oil temperature drops to a safe operation limit, pressing this button for 5 seconds resets the high limit sensor.

Assembling Filter Pan and Filtering

  1. Before filtering the oil, completely disassemble, wash, dry, and reassemble the filter pan.

    • Take note of the O-rings. These should be replaced quarterly.

    • Ensure the filter pan is kept clean and operational.

  2. Become familiar with the Filter Menu.

  3. Understand how the automatic quick filter and filter lock out work. The unit will filter after 36 cooking cycles. Know how to enter the filter menu to start a Quick Filter. This can be done during slower times to reset the filter count prior to filter lock out Filtering the oil is essential for:

    • Prolonging the life of the oil.

    • Keeping the oil clean and maintaining consistent product flavor.

    • Requiring less oil replacement and disposal.

Filling Auto Top Off (ATO)

  • Keep the fresh oil tank filled with oil. This allows the ATO feature to function properly and automatically top off the oil level in the vat within operating limits.

  • If not filled properly, it will cause wear and tear to the ATO pump and create increased service costs.

Cleaning

  1. Perform a Daily Filtering process. The following daily cleaning should be done:

    • Use brushes to scrub inside the vat.
    • Use the Wash function to pump oil into the vat to wash the crumbs out.
    • Perform a polish.
  2. Access the Clean-Out Mode.
